28 Days of Salads: Spinach & Red Quinoa Salad

Salad # 4 : Spinach & Red Quinoa salad

We had a busy weekend so my salads this week are store bought and pre-made.  My favorite store bought salads are from Roche Brothers but when I can't get there, Market Basket will suffice.  They have some fun salads packaged at $3.99 each.

I picked up the Spinach & Red Quinoa salad that had fresh spinach, carrots, romaine, endamame, red quinoa and dressed with a raspberry vinaigrette.

I'm picky with my chicken and prefer only Trader Joe's or one cooked at a shop.  I ordered a pound of grilled chicken tips from La Cascia's in Burlington.  That usually lasts me about 3-4 days. Price isn't bad, its around $ 6 bucks and its perfectly seasoned and grilled to perfection.

The only effort is to cut up the chicken and toss it in the salad. If you want it a little warm, zap the poultry in the microwave for 25 seconds.


Voila! A delicious vibrant salad that is much funner than your boring iceberg lettuce.  Just a warning, due to sweet raspberry dressing and the quinoa, the carb count is a bit high, exceeding 40 grams.


The nutrition fact below is just for the salad (sans chicken), add in another 200 calories for the 4 oz of chicken breast
